The remaining 50% brings brightness and intrigue: 30% citrus-forward washed Colombian beans and 20% of Wilton Benitez’s rare Pink Bourbon, processed using his signature thermal shock method. This addition brings a sparkling, fruit-led lift — candied berries, mulled citrus, and a gentle, honeyed acidity that illuminates the blend.
Paired alongside it, Thermal Shock Pink Bourbon by Wilton Benitez is a celebration in itself. From Granja Paraíso in Colombia, Wilton’s pioneering fermentation method intensifies the expressive nature of this rare variety.
