The Producer
In the hills of Palestina, Huila, Juan Jiménez and his wife Leidy care for their 17-hectare farm witt quiet dedication. Once a farmhand here himself, Juan bought the land in 1988 and has since nurtured it into one of the region’s shining coffee producers. While others chase experimental methods, Juan stays true to tradition—handpicking ripe cherries, pulping, and fermenting for 36 hours. The result is a cup that feels both classic and extraordinary: vibrant, refreshing, and a beautiful example of Pink Bourbon at its very best.
