It’s a juicy, layered experience that showcases the unique character of Guji and the magic of natural fermentation. The Producer

Ture Waji, the owner of Sookoo Coffee, is a passionate leader and advocate for the Guji region. Growing up in the area, he has strong ties to both the land and the local community. After gaining experience in coffee export and farm management, Ture founded Sookoo Coffee in 2018, with a vision to produce high-quality coffee while empowering smallholder farmers. His
commitment extends beyond coffee, as he works to improve local infrastructure and support women in the community through sustainable practices.

The Terroir

Nestled in the hills of Shakiso, Guji, the Suke drying station has been at the heart of Sookoo Coffee since its establishment in 2017. This particular lot comes from the Shoondhisa sub-kebele within the Suke Quto kebele, where cherries are sourced from around 35 smallholder farmers. After carefully sorting out any imperfect cherries, Sookoo uses a slow anaerobic process,
fermenting the cherries in sealed GrainPro bags for 86 hours. Once this period in a low-oxygen environment is complete, the cherries are spread on drying tables and left to dry for about 25 days.
